Procedures:
- Prepare the apple mustard compote using a separate recipe or purchase a ready-made.
- Preheat your oven to a temperature of 400 degrees Fahrenheit.
- Season the pork loin with pepper and salt.
- Make 4 thin slits on the pork loin and insert the garlic cloves.
- Heat the oil, butter, and thyme in a skillet on medium-to-high heat until the ingredients start simmering.
- Discard the thyme and add the seasoned pork.
- Brown all sides. Afterward, transfer it to a baking dish.
- Bake the pork for an hour.
- To make the herbed pecan crust, combine all the ingredients (excluding apple butter, salt, and pepper) in a food processor until smooth.
- Transfer the mixture to a bowl and add the apple butter, salt, and pepper.
- Remove the pork once finished baking and pat the herbed mixture on it gently.
- Bake the pork again for 25 minutes at 145 degrees Fahrenheit.
- Afterward, rest the baked pork for 10 minutes before slicing.
- Serve the sliced pork with the apple mustard compote.
